OVERVIEW
This chapter provides instructions for operator/ crew level maintenance. Lubrication instructions,
troubleshooting procedures, and maintenance procedures are provided that will allow you to keep the
kitchen operational. If a problem occurs that is not covered in this chapter, notify your supervisor.
